Question:

Black southern food?

I am doing a presentation tomorrow on "Elbow Room" - a collection of short stories about African Americans in the South during the 1960s and 1970s. I want to play music and bring in some food dishes that represent this culture and era. Any suggestions? Thanks a lot.

  2. Cabbage, Corn Bread, Southern Fried Chicken, Watermelon, Macaroni & Cheese (not Kraft, you know, home-made.. better if baked), Biscuits w/ Home-Made gravy, Southern-style green beans (green beans cooked in stewed tomatoes), and baked beans.

  3. All of the suggestions are wonderful, but its summer, how about fried green tomatoes, okra salad with corn and tomatoes? Delicious and seldom seen. Make a really sweet tea, mint tea or lemonade. People just aren't used to the old standards. The most important thing about the tea, boil the water first, add the sugar and stir until melted. If you can make the tea and add fresh mint tea to the jug.

  4. Remember that at times like those black people werent really doing all that well financially. So alot of food was what they grew and raised themselves. They ate chitterlings because it was only right to savage every last drop of the pig. Lots of Rice and Neckbones because it was inexpensive and fed alot of people. Fried salt pork as a snack. Dont forget Bbq because some people were just accustomed to cooking in pit outside there house from times whenthere were no electricity. Boiled peanuts as a snack. The staples are always good. Collards. I would make potato salad as well

  5. pork neck bones and pinto beans-  mashed potatoes- greens- corn bread  sliced tomatoes with green onions on the side  hot sauce   fried chicken or pork chops or both

    Cornbread

  7. All of the foods people listed are great but keep it simple.

    Cornbread, Sweet Potatoes/yams, beans, collard greens are gonna be the easiest to bring and serve. Look in the ethnic food aisle and you can pick up Glory products canned-yams, green, beans etc. Glory makes all kinds of southern/soul food. Sylvia's is another soul brand sold in stores.

    If you get in a pinch you can buy prepared cornbread from Whole Foods or Giant Supermarket. Check in supermarkets bake section
