Question:

Bolognaise sauce is a bit sweet?

What can I do to make it more savoury? The tomatoes were really ripe and sweet, so now my sauce is too. I can't add more salt.

  1. Try more garlic and a fresh chilli chopped in.


  2. Add a squeeze of lemon juice - you wont know it's there but it will help balance. In extremis use some unsweetened orange juice.

  4. i dont understand you question, drink a glass of water and retaste it, maybe there is something wrong with your taste buds. If its too sweet and you believe there is enough salt then add more pepper to give it a little bite.

  5. passata is anoter you thing to use you could make your own, but cooking tomatoes no much makes them sweet but it you make a good base with onoins and herbs and mince i don't like bisto or stock cubes in it as they are salty.  amking a good tom sauce to put in with the mince etc makes it taste better and season well will make it taste better and less sweet.

  6. use tomato puree as well as tomatoes and put in an oxo cube, but bear in mind oxo cubes have salt in. or you could use bisto granules, I use the reduced salt one.

  7. Just add a few drops of lemon or lime juice until it tones down a bit and stir.

  8. A large tot of malt whisky is a good additive,my two daughters would not eat bolognaise if my wife made it,she never found out about my secret.The kids wolfed my bolognaise down and asked for seconds.A tad of Soya sauce may help as well.
