Bone-in chicken b*****s for dinner, what should I make?

I hae just defrosted bone-in chicken b*****s for dinner tonight but have no idea what to make. I don't want fried chicken and my husband just told me he has a business dinner so it is just me. In that case, I need something tasty and delicious but easy to spoil myself.

Please help, I can never find good recipes on the cooking websites.

  1. I make a super easy, low cal/low fat BBQ chicken.  That even though it sounds weird, makes a wonderful sweet sauce.  It's my husband's favorite!

    Brown chicken b*****s in skillet.

    In bowl mix together:

    1 cup ketchup

    Almost 1 can of diet coke or diet root beer

    Dried onions (or chopped fresh), to taste - I like a lot of onions

    Cayenne pepper, to taste for a little zip

    Garlic powder, to taste

    I also add some Spicy Brown Mustard to my sauce

    Pour mixture over chicken in the skillet, cover & let cook until done.  The last 5-10 minutes I take the lid off, but continue to cook so the sauce thickens some.  

    I usually serve with cornbread or corn on the cob & sweet potato french fries.  It's stick to your ribs comfort food.

    Another easy one I like is brown the chicken in skillet & then add can of cream of mushroom soup, some white wine & cook.  Top with sliced almonds.  Serve with fresh green beans & rice or simple buttered angel hair pasta.

    4. 1/2 cp milk

    5. Mix wit cream of ckn

    6. Spread on top of ckn

    7. Top wit bread crumbs

    8. Sprinkle wit butter

    9. Cook on 350* for 20 -35 min

  3. What I do when it is just "me" is I cook ALL-OUT CHEF-style.

    To cook Coc-au-vin, I top my chicken pieces with a mixture of dried seasonings (onion powder, Maggi seasoning, and *a touch* of currie for some zest.)

    I let this sit aside while I prep. everything else;

    In a roasting pan, I lie these pieces atop a bed of small veggies (fresh are most healthy); peas, tiny carrots, onions.)  :-')

    I then top these veggies with chicken pieces with Sherry wine.

    Roasting at 350 for 40 minutes I serve this mixture atop a bed of freshly steamed rice.

    The alcohol in the wine will evaporate while cooking.


  4. place your chicken in a baking pan ontop of thick sliced onions cover with barbuque sauce and cover the pan tightly with foil and bake 350 for 2 1/2 hours, serve with mashed potato's and lima beans

  7. Chicken Paprikash - You can cut any of these recipes in half if you want. I am cooking only for myself tonight also and cooking bone in chicken b*****s, but since it's just me - I am making a chicken salad sandwich. Here are a few more recipes if you want. Which are ALL good!!!



    INGREDIENTS

    3 eggs, beaten

    1/2 cup water

    2 1/2 cups all-purpose flour

    2 teaspoons salt

      

    1/4 cup butter

    1 1/2 pounds bone-in chicken pieces, with skin

    1 medium onion, chopped

    1 1/2 cups water

    1 tablespoon paprika

    1/2 teaspoon salt

    1 teaspoon ground black pepper

    2 tablespoons all-purpose flour

    1 cup sour cream

    DIRECTIONS

    Fill a large pot with water and bring to a boil over high heat. In a large bowl, mix together the eggs, 2 teaspoons of salt, and 1/2 cup of water. Gradually stir in 2 1/2 cups of flour to make a stiff batter. Using two spoons, scoop out some batter with one spoon and use the second to scrap off the spoonful of batter into the boiling water. Repeat until several dumplings are cooking. Cook dumplings for 10 minutes or until they float to the top; then lift from the water and drain in a colander or sieve. Rinse with warm water.

    In a large skillet over medium-high heat, melt butter and add chicken; cook until lightly browned, turning once. Add onion to skillet and cook 5 to 8 minutes more. Pour in 1 1/2 cups of water, and season with paprika, salt, and pepper; cook 10 minutes more, or until chicken is cooked through and juices run clear. Remove chicken from skillet and keep warm.

    Stir 2 tablespoons of flour into sour cream; then slowly stir into the onion mixture remaining in the skillet. Bring the mixture to a boil, stirring constantly, and cook until thickened.

    To serve, add dumplings to the sour cream/onion mixture, then spoon onto dinner plates adding a piece of chicken.

    Whit's Chicken Enchiladas --

    INGREDIENTS

    4 bone-in chicken breast halves

    2 tablespoons olive oil

    1 (4 ounce) can diced green chile peppers, drained

    1 jalapeno pepper, chopped

    1 clove garlic, minced

    1 (8 ounce) package cream cheese

    2 cups shredded Monterey Jack cheese, divided

    1/2 cup water

    8 (10 inch) flour tortillas

    1 cup heavy cream

    DIRECTIONS

    Place the chicken breast halves into a saucepan, and fill with enough water to cover. Bring to a boil, and cook until the chicken is cooked through, about 20 minutes. Remove from the water, and set aside to cool.

    Preheat the oven to 375 degrees F (190 degrees C). Remove the chicken meat from the b*****s, and discard the skin and bones. Set aside.

    Heat the olive oil in a large skillet over medium heat. Add the green chilies, jalapeno and garlic. Cook and stir for a few minutes, until fragrant, then stir in the cream cheese and half of the Monterey Jack. As the cheese begins to melt, gradually stir in the water. Chop the chicken meat, and stir into the skillet. Remove from the heat.

    Spoon the chicken mixture into tortillas, and roll up. Place the rolls seam side down in a 9x13 inch baking dish. Sprinkle the remaining Monterey Jack cheese over the top, then pour cream over all.

    Bake for 30 minutes in the preheated oven, or until the enchiladas are golden brown on the top.

    Garlic Parmesan Chicken --



    INGREDIENTS

    2 cups dry bread crumbs

    1/2 cup grated Parmesan cheese

    1 (3 ounce) can French-fried onions

    1 teaspoon mustard powder

    1/2 cup butter

    2 cloves garlic, chopped

    1 tablespoon Worcestershire sauce

    8 bone-in chicken breast halves, skinless

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

    In a shallow dish or bowl, combine the bread crumbs, cheese, onions, and mustard powder; set aside. Melt butter in a small saucepan; add garlic and Worcestershire sauce, and saute garlic until tender. Remove from heat.

    Dip chicken b*****s in garlic butter mixture, then roll in bread crumb and cheese mixture, coating thoroughly. Place coated chicken in the prepared baking dish. Drizzle with any remaining garlic butter mixture.

    Bake in the preheated oven for 30 to 40 minutes, or until chicken is no longer pink and juices run clear.


  8. soak it in some italian dressing for alittle while then pop it in the oven and cook it then eat it on a nice salad.  (it would be just like a grilled chicken salad)  

  9. Hello,Do you like casseroles? Here's one you can make that is real good and is simple too prepare. Just take a 13by9 casserole dish,spray it with some non-stick spray and then place in it the following items. First put some white are brown rice in the pan.Then put some herb flavored cream-style soup, some Ms.Dash herb seasoning,then mix that with the rice.Then place your chicken in the pan and then put some bread-crumbs on top of that,then place the casserole in the oven at 375 degree's for 30 to 35 minutes,or until chicken is done. There you have it,a quick and easy dinner.Make a salad and some sort of vegetables say steam,and you will have a great dinner,that's  good for you in no time at all.

  10. This is scrumptious.

    Slice a pocket in the chicken breast.  Stuff with a mixture of feta cheese, Parmesan cheese, chopped spinach, minced garlic, sliced green onion and a little lemon juice (sometimes I add some chopped dill and pine nuts, as well).  Bake uncovered at 350 for about 45 minutes, or until done.
