  1. Are you asking how to season it?

I'd say Montreal Chicken Spice and balsamic vinegar. Yum!

  2. Chicken needs to have a internal temperature of 160 degrees to be safe from food-born illnesses, especially if you're re-heating already cooked meat.

If you cut the breast in half and it's white in the middle, it's fully cooked. If it's still pink, cook it for longer.

  3. It will depend on the thickness of each boneless chicken breast. Not too high heat sounds right since most of our favorite grilling recipes recommend grilling boneless chicken b*****s over a direct-medium fire on a covered grill until well done (170°F).

For grilling times we use the cookout calculator at charcoalbob.com. Just enter the details about your grill (gas or charcoal) and thickest part of each boneless chicken breast. It will calculate the grilling times and give you instructions for when to put on and turn each chicken breast so that they all come off the grill at the same time.

We also use a quick read thermometer to make sure the chicken is well done.
