Can I use left over Buns rather than white bread?

Of course, as long as they don't have some kind of seed on top.

Sure you can.  You may need to increase the milk a bit, but it should be a good substitution.

You can used any type of bread that you like.

Oh yes!  that's the great thing about bread pudding - you can use any leftover bread.  if the bread is quite old (never moldy) then just let the egg mixture sit on it a little longer before baking
