Question:

Bread-free, vegetarian meals?

I'm a lacto-ovo vegetarian [no meat, but eggs and diary are ok] and i would like to try that no bread/no carbs diet for just a few days to see if it really works.You see, i eat mainly rice/pasta, fruits/veggies, and meat substitutes. I think that I am eating too many carbs with the pasta/rice, and that is why my [considerably] healthy eating and exercise have not helped me lose any weight. What are some good bread/pasta/rice free dishes i can cook up at home?

oh, and, I may end up some bread/rice/pasta in the day if I think i need the carbs. I would just like to see how the carbs effect my body. I'll be eating enough sugars and proteins, though. And i take a women's multi vitamin.

  1. chili? homemade curry? quorn and veggie stir fry? egg white omelette?

Veg stir fry and you can switch up the veggies and flavorings so you don't get to bored.  Tofu can be seared in a saute  pan w/ evoo for added flavor then sliced and put on top of some nice greens.  I do a salad with no greens sometimes for a change of pace too,  add lots of nice chunked veggies (ie: celery, grape tom's, cukes, red and green peppers)  then I toss in some sliced calamata olives and toss it with some type of vinegarette...If you can have feta I would throw some of that in also. Good luck

  3. Stir Fry is always good. Salad (fruit salad, Cesar, others) is also good but you can only eat so much of it until you get tired of it.

    Shis Ke babs with only veggies on it are very tasty!

  4. Frittata:-  Carrot, Corn and Pea.

    ½C. Carrots. (diced, cooked or frozen)

    ½C. Corn kernels. (cooked or frozen)

    ½C. Peas. (cooked or frozen)

    6 Eggs.

    S&P to taste.

    Preheat the grill. (broiler)

    Whisk the eggs together.

    Place vegetables in a 300mm (12”) and start to heat and then pour over the eggs and let them run through the vegetables.

    Season and let the bottom set.

    Place under the grill until the eggs finish setting.

    You may want to shield the handle.

    Turn out and slice like a pizza.


  5. try an eggplant parmesan if you are ok with dairy. here's a recipe. eggplants are great for chicken subsitutes!

    INGREDIENTS

        * 2 tablespoons olive or vegetable oil

        * 1 garlic clove, minced

        * 1 small eggplant, peeled and cut into 1/4 inch slices

        * 1 tablespoon minced fresh basil

        * 1 tablespoon grated Parmesan cheese

        * 1 medium tomato, thinly sliced

        * 1/2 cup shredded mozzarella cheese

    DIRECTIONS

       1. Combine oil and garlic; brush over both sides of eggplant slices. Place on a greased baking sheet. Bake at 425 degrees F for 15 minutes; turn. Bake 5 minutes longer or until golden brown. Cool on a wire rack.

       2. Place half of the eggplant in a greased 1-qt. baking dish. Sprinkle with half of the basil and Parmesan cheese. Arrange tomato slices over top; sprinkle with remaining basil and Parmesan. layer with half of the mozzarella cheese and the remaining eggplant; top with remaining mozzarella. Cover and bake at 350 degrees F for 20 minutes. Uncover; bake 5 minutes longer or until the cheese is melted.
