Breakfast Bread Pudding??

I am looking for a breadpudding recipe that has roasted-nuts, toasted coconut, dark and golden raisins and dried cranberries. Help!! I had one years ago called Breakfast Something... and it had a little of everything in it and was delicious.

  1. Here is a really fabulous bread pudding.  Add your nuts and raisins and toasted coconut to it.  I would say you need about 1/2 cup each of the nuts, coconut and dried cranberries to round it out.  

    This bread pudding is a lovely soft consistency so I am certain that the additional ingredients will work well.

    Bread Pudding

    1 (1-pound) loaf cinnamon-raisin bread

    1 quart milk

    3 eggs, slightly beaten

    1 cup sugar

    2 tablespoons vanilla extract

    Pinch of ground nutmeg

    3 tablespoons butter or margarine melted

    Break bread into small chunks; place in a large bowl. Add milk, let soak 10 minutes. Work mixture with hands until milk is absorbed.

    Combine eggs and remaining ingredients. Stir into bread mixture; pour into a 13- x 9- x 2-inch baking dish. Bake at 350 degrees for 50 minutes or until a knife is inserted in center comes out clean. Yield: 12 servings.
