  1. Barley

  4. There are only 4 basic ingredients to beer (NOTHING MORE)

    1) Malted Barley; (where enzymes are activated to convert starch to sugars)

    2) Hops; Add Aroma, some flavor and Bitterness (extracted from the flower lupulin gland and vary by what is called Alpha Acid content)

    3) Yeast; this converts the ferment-able sugars into co2 and alcohol. Some say that the yeast is the most important element in beer and in some brewery they have been brewing with the mother yeast for over a 100 years and is very protected. Many breweries may give out the recipe but will not share info on yeast

    4) Water; Beer is 90% water and yes it is a important ingredient especially when doing all grain brewing.

    THATS IT! While many very very large brewerys (you know what ones they are) use adjuncts (other cheaper additives) like rice to keep the cost down so you buy their inferior quality product. If this is what you like so be it, but you really haven't enjoyed a quality beer then IMHO.

    The price of quality ingredients have risen dramatically over the last year (hops and grains) but micro brewerys especially those who adhere to the German purist law (Reinheitsgebot) must follow the above mentioned ingredients and nothing else, period.

  5. Get Papazian's book The New Complete Joy of Home Brewing. That will list the four necessary ingredients and the multitudinous other things that can be put in. Would you believe pumpkin? Garlic? Spruce twigs?
