If you start out with a certain amount of matter, you always have the same amount of matter.  It can't be created or destroyed.  That's the simple version.  In a more advanced class, you'll learn that matter can be converted into energy and vice versa.

Matter can not be created or destroyed, only changed from one form to another.

Science has actually had to modify that to total conservation of mass and energy as mass can be converted to energy (E=mc2).
