Bright pink crunchy sticks?

Question

We had Middle Eastern food brought into work today and they had these really delicious bright pink crunchy sticks. They were similar to carrots (or maybe they were just carrots dyed pink). I couldnt for the life of me figure out what they were or how they were pink? They bright pink just seemed so out of place with rest of the food. Any ideas?

It is pickled turnip. They are pink because they use beetroot juice.
