  1. 1 qt. buttermilk

    1/4 c. oil

1 c. cream or canned skim milk

    1 pkg. yeast

    2 c. white flour

    2 c. wheat flour

    2 tbsp. baking powder

    2 tbsp. baking soda

    2 tbsp. sugar

    1 tsp. salt

    1 c. applesauce (optional)

Mix ingredients in order given. This is a very large recipe which serves 12 or you can use it over a number of days.

Can be stored for up to one week; mix up the night before using.

Store covered loosely with plastic wrap in refrigerator, leaving room for expansion as mixture will bubble up.

Note: Recipe can be halved. Over time, you may need to add water or flour to bring back the right consistency.

  2. Yes self-rising flour is fine.

    Easy Buttermilk Pancakes

    2 eggs

    2 cups buttermilk

    1/4 cup Vegetable Oil/Olive oil

    2 cups Self- Rising Flour

    2 tablespoons sugar

    1/2 teaspoon baking soda

Heat griddle or large skillet to medium-high heat (375º F.). Grease lightly with oil. Griddle is ready when small drops of water sizzle and disappear almost immediately. Pancakes will stick if griddle is too cool.

In large bowl, beat eggs with fork or whisk. Add buttermilk and oil; mix well. Add all remaining ingredients; stir just until large lumps disappear. For thicker pancakes, add additional flour; for thinner pancakes, add additional buttermilk.

For each pancake, pour about 1/4 cup batter onto hot griddle. Cook 1 to 2 minutes or until bubbles begin to break on surface. Turn; cook 1 to 2 minutes or until golden brown.

Variations: Apple Pancakes: Add 1/2 cup shredded peeled apple and 1/2 teaspoon cinnamon to batter. Blueberry Pancakes: Add 1 cup fresh or frozen blueberries to batter or sprinkle over pancakes on griddle before turning. Cheese: Add 1/2 cup shredded cheese to batter. Nut: Add 1/2 cup chopped nuts to batter or sprinkle over pancakes on griddle before turning.12 pancakes

Also here are some helpful tips:

*If you don't have buttermilk you can add 2 tablespoons of lemon juice to regular whole/evaporated milk.

*Also for melt in your mouth pancakes add one more tsp of baking powder and 2 tbsp of lemon juice.

    YUMMM!!!!

  3. That sounds disgusting!!!
