Buttercreamed cake out of fridge?

i have to frost a cake with butter cream for tonights party. but the cake board doesn't fit in the fridge. its 13c right now. would the cake keep out of the fridge for 9 hours at this condition?

  1. It should last more than 9 hours. When you put something in the refrigerator it usually hardens and you want the cake to be moist. So no, I would suggest not to put it in the fridge.

Ye-ess . . . but depending on the type of buttercream icing you're using, you might have some issues.  Buttercream has a high fat content, and left out of the fridge tends to "weep" . . . ie, sag a little and get ultra sticky.  If you're not doing any fancy decorations, you should be fine, but try and keep it somewhere where it's as cool as it can get.  If you have a fan to turn on it, that would help.  And, of course, no matter where it is, it should be covered, because all icing, especially buttercream, soaks up strange smells and flavours like crazy.

  3. my mother was a professional cake decorator for 45 years.  she never refrigerated her cakes.  she always used butter cream icing.  She would ice her cakes on Friday for a Saturday wedding.
