Question:

Cake Recipe (2)? Beating eggs?

My friend's cake recipe states you must beat eggs for 15 minutes (no more no less as that's the secret apparently) Anyway, i'm guessing this time is by hand, so if i'm using an electrical mixer, how long do you think I need to beat the 5 eggs for?

  1. I should think that they just need to be light and fluffy.


  2. I would do it the same amount of time, most recipes today are with a mixer.

  3. Beat eggs 'til yellow and white are mixed..about 15 seconds..then fold into cake mixture.  Don't beat after this stage or you'll beat out all the air you've already beaten in at the beginning.  This works for me.

  5. I have never seen a recipe where you had to beat eggs that long.  What kind of cake is it anyway?  Once they are thoroughly blended, they aren't going to get any thicker.  The standard is to beat them until thick and lemon coloured, nothing beyond that.

  7. by the sounds of it 15mins the whole piont of beating the eggs that long is to airate them and make the cake light and fluffy

  8. It's 15 min. But my mom says "If you over beat it will become to thick.

    So your safe bet don't go past 15min.

  9. The idea with any cake mix is to get 'air' into the mixture, by beating, not overkill !

    An electric mixer would obviously give you after 6-7 minutes (prob even less) enough air in the mix to give you a cake that would happily rise in the oven.

    Don't over-beat, as you just may 'curdle' the ingredients.

  10. Are you sure its 15 mins? They ain't just having you on a wind up are they?

    I've never heard of beating eggs for that long. I'd just do it until its mixed well.
