Cake flour instead of all purpose flour?

I am making a tres leches cake and the recipe i found is highly rated and i have all of the ingredients that it asks for, but i need to use cake flour instead of the all-purpose flour it asks for. What difference does this make?

  1. If it calls for cake flour, and all you have is a/p, measur out a cup of a/p flour, then remove 1 tablespoon of flour from each cup, then add to your recipe.

    Cake flour has less gluten (protein) than a/p flour and makes a lighter, tenderer product.


  2. cake flour is finer, you will have different results with this...all-purpose flour is pretty cheap, go buy a bag
