Milk has both Ca(2+) and PO4(3-). What characteristics of milk prevent these two ions from forming calcium phosphate

  1. 1) Milk contains a LOT of water and water is very polar.  This polarity helps keep the phosphate and calcium ions from remaining in contact for long thus keeping them in suspension.

    2) Milk also contains a protein called casein.  The protein also has some polar areas on it which can tie up the phosphate and calcium ions.

    3) Occasionally a tiny amount of calcium phosphate may form but it is quickly dissolved by the water in the milk.
