Calling all Irish cooking people!?

Hello

ok im doing a report and i thought i would make a traditional dish from ireland. The dish right now that im intrested in is champ.. i have read whats in it but like do u just make mashed potatoes thorwn in some green onions and butter and thats it? what makes it good?

  1. Well not only am I a former chef my family is from Ireland, and what makes it best is the ingredients, lots of butter, cream or milk and the mashed potatoes, a mix or mealy and waxy ones make a good "champ".

    A similar dish called "Colchonan", it is a mix of potatoes, cabbage, green onions and cream it is more dense and like a stew, but but are based on the flavour of the spuds and the creamy ingredients and lots of chopped green onions.


  2. You have to taste it then you wont even ask that question. Its the onion and milk that makes it good i never eat mashed potato without onion in it. Its just better than plain old mash
