Can I bake just plain old zucchini?

Question

I was wondering if it would be okay if i chop some zucchini up in thin slices if i can just put them in the oven and bake them? Or would i need to put them in the oven in oil or something?

toss with a little olive oil and bake at 350. then drizzle with a little more olive oil & balsamic vinegar

Ofcoarse you can. One of the oldest recipes I've ever learned was a zucchini pie. It's made identically like an apple pie but with one ingredient change.

You might want to toss the slices in a bit of oil to make sure they don't dry out. Also, zucchini doesn't have much flavor, so toss the slices with some spices (salt, pepper, garlic powder, or just use a Lipton vegetable soup packet) before baking.
