Can I can any low-acid foods with a pressure canner?

I have loads of eggplant and a pressure canner. Is it safe to make a big eggplant curry kind of thing and can that with a pressure canner? I guess I'm wondering what can't I can with a pressure canner?

  1. You don't need a pressure canner for things like pickles and tomatoes, but you do for anything that doesn't have enough acidity.  Do a google search to make sure you get the right timing and pressure information.
