Question:

Can I cook a bobboli-type pizza on the outdoor barbeque?

I was planning on heating up the grill, putting the pre-made crust on a pizza pan and closing the cover. Will this work without burning the bottom of the pizza?

  1. yeah, that will definately work and that sounds like a great idea. so put the pan on so it wont burn :)


  2. Yes, it will work.  Just make sure the grill isn't to hot and that you are using a pan that can withstand the heat of grill.  I don't even use a pan, I put it on the grate with a pizza peel over medium heat and cover it.  It takes 5 or 6 minutes.  I use a charcoal grill.

Yes, I was just looking at instructables.com a few minutes ago on this very subject to see how others do it.  I have cooked homemade pizza on the bbq (I make my own dough) and with a little trial and error and some charring, it can be done easily.  I don't have a second level rack but I use two bricks for my pan to rest on.  

    Here is the basic way I do mine.  (I haven't tried it using a cast iron pan but most definitely I will.)

    Using a premade pizza dough should make this a little easier.  But, be sure to elevate the pizza so it doesn't burn so easily.  Use a thermometer if you have one.  You don't want the bbq to get too hot (over 450 or so). Burn off the grill before putting the pizza in or else it will taste smoky.  Keep an eye on the pizza and rotate it too.
