Many years ago my wife and I spent a summer n SouthEastern Colorado. The local restraunt served an entree called a "Smothered Avocado Stuffed Sopapilla". We ate it often - real often. We have never seen it since. We will be in New Mexico in late September for our 30th Anniv and are hoping to find this dish. It is a classic sopapilla (not sweetened) stuffed with guacamole and smothered in a red chile sauce. I can almost taste it....
