Can I freeze this salad dressing?

I made this Cilantro Pepita salad dressing today and it made a lot. I don't know if I will be able to use enough before it goes bad. Do you think it could be frozen? Here is the recipe if that helps.

***Cilantro Pepita Dressing:***

1 medium Anaheim chiles, roasted, peeled and seeded

1/6 cup roasted pepitas (pumpkin seeds)

1 garlic cloves, peeled

1/8 teaspoon ground black pepper

1/2 teaspoon salt

6 ounces salad oil

1/8 cup red wine vinegar

2 1/2 tablespoons grated Cotija cheese (see note)

1 small bunches cilantro, stemmed

3/4 cup mayonnaise

1/8 cup water

  1. The egg yoke (from the mayo) will split from the oil when the dressing in thawed.  Looking at your recipe, it does not seem a huge quantity.

    as long a the dressing is not left out on the table. It should be fine in the fridge for about a week. Though of course the pumpkin seeds will go soggy.  Or be a good neighbor and invite a few people around for lunch.

    Next time you make this I personally would just mix the mayo, oil, vinegar, black pepper and garlic then add the other ingredients 10 minutes before you serve it.  This way you might find a second use for some of your garlic mayo, before it is turned into salad dressing with the addition of the other ingredients.

    My other suggestion is, if the dressing is only to dress a small side salad you will only use a little.  But perhaps if you chargrilled a chicken breast. Sliced it and place it ontop of the salad your salad is now a main course thus you will need more dressing.

  2. My guess would be no way with the oil and mayo in there.  Freezing would ruin.

  3. THE OIL AND MAYONNAISE WILL SEPARATE ON THAWING SO GIVE IT A GOOD BEAT AGAIN.

  4. Mayo does not freeze well, it has a tendency to separate.

    That said there is a fairly small amount in the recipe so I say give it a shot, what do you have to loose.  If it is between tossing some out now or in a month when you thaw it, it still gets tossed out.

    You could also give some to family or friends.

    I just thought of something else you can do.. Use it as a marinade for chicken or shrimp.  Marinate for a while, no longer than 30 minutes, and grill. Keep the flame low on the grill or use indirect heat.

  5. My advice is that anything I am unsure of freezing, I freeze anyway. There is no sense in letting something ruin and later find out it would have been fine frozen.  When you thaw it I am guessing that you will need to let it COMPLETELY thaw and mix the heck out of it again.  The above answer says no because of oil/mayo, but there is oil IN may.....So I say give it a whirl!
