Can I have a few veggie meal ideas please for a party please.?

I'm planning to throw a bit of a bash for the hopefully victorious rugby team my husband plays for in a couple of weeks time. I know a few of the people who will be invited are vegetarians so I'd like to have a few interesting dishes for them too. It'll either be a casual buffet style job or a bbq or both depending on the weather. Any ideas would be much appreciated.

  1. SMOKED HAZELNUT BURGERS

    These can be prepared well in advance.

    In fact, the longer the mixture is left to chill in the refrigerator, the easier it is to shape the burgers.



    50g/2oz hazelnuts

    150g/6oz cooked chickpeas

    1 small onion, finely chopped

    50g/2oz carrot, finely grated

    1 clove garlic, crushed

    1dsp olive oil

    50g/2oz smoked vegetarian Cheddar cheese, grated

    25g/1oz fresh wholemeal breadcrumbs

    1 free-range egg, beaten

    2tbsp fresh herbs, finely chopped

    dsp tahini

    dash of shoyu

    pinch of cayenne pepper

    salt

    extra olive oil for brushing on the barbecue

    wholemeal buns, shredded iceberg lettuce, sliced tomatoes and mayonnaise to serve

      

    1 Blend the nuts and chickpeas in a food processor.

    2 Fry the onion, carrot and garlic in the olive oil until soft, then remove from the heat.

    3Add all the remaining ingredients and mix thoroughly until the mixture binds together. Chill.

    4.Divide the mixture into 10, roll into balls then flatten into burgers.

    Chill for at least two hours.

    5 Lightly oil a baking sheet, and place on the barbecue. Cook the burgers on the pre-heated baking sheet for approximately 20 minutes, turning once.

    6 Serve in wholemeal buns with shredded iceberg lettuce, sliced tomatoes and home-made mayonnaise.

    Potato wedges plus sour cream/chives

    Mixed olives with feta cheese

    Hummus/pita/Greek salad

    Gazpacho soup

    Garlic bread

    Tomato and mozzarella with vinaigrette

    Four cheese pizza slices

    Baked avocado

    Edit - Some nice fruit salad for desert would be great. Plus don't forget the champagne or beer for a victory toast. lolol x*x

  3. I'm sure many vegetarians will appreciate veggie burgers/veggie sausages for a BBQ. It depends what type of vegetarian you are catering for. Some veggieburgers contain egg & milk derivatives.

    For a buffet, you could have some hummus, rice, couscous, vegetable batons and crackers. For vegetarians that eat dairy, you could offer cheese & tomato salad sandwiches, or be a little more adventurous with hummus and grated carrot sandwiches. (Hummus and carrot complement each other very well).Roast vegetable skewers are really tasty.

    [edit] Personally I get a little bored of pasta. It's nice but I love couscous with roast vegetables so much more. =)

  5. Amy's Indian food or Trader Joe's Indian Food (Dal) with rice.

    Hummus, pita bread and a salad.

    Slice tomatoes in rounds, top with Soya Kaas mozzarella cheese, basil, cut up figs (peeled, washed in hot water to bring out the sweetness) sprinkle with a little olive oil and balsamic vinegar. Leave out to room temp until cheese is 'melted' looking.

    Stir-fry veggies and rice with Tofu - I use extra firm, wrap in paper towels to soak up the excess water. Cut in slices, fry in a little olive oil, hot pepper sesame oil and soy sauce. Sprinkle with ginger, garlic, curry, whatever you have in the cupboard. Top with sesame seeds. You can also top it with sliced veggie cheese and serve on toasted sourdough with mustard.

    Gardenburger Riblets, baked potato, broccoli (w/ lemon, margarine and garlic) and a salad.

    Clean portobello mushrooms, cut up, saute in olive oil, garlic and a little soy sauce. Serve with salad.

    MorningStar Farms Sausages (not the breakfast ones) are good on homemade pizza - add mushrooms, tomatoes, broccoli, peppers, onions, soy cheese.

    To vegetarian refried beans add mild green sauce. Add soy cheese if desired. Make Spanish Rice – Far East and/or Rice-a-Roni makes it in a box, just add tomatoes. Serve in a burrito, taco or tostada – add lettuce, tomatoes, soy cheese and avacado to the top.

    Quorn turkey roast, with mashed potatoes and a vegetable.

    Basil, Tomato and Mozzarella Sandwich

    INGREDIENTS

    1 (1 pound) loaf Italian bread

    6 fresh basil leaves, chopped

    2 tomatoes, sliced

    4 ounces fresh mozzarella cheese, sliced (Soya Kaas)

    1/8 teaspoon red pepper flakes

    1/2 cup balsamic vinegar

    DIRECTIONS

    Slice the loaf of bread in half lengthwise. Layer the basil, tomato slices, and mozzarella cheese between the two halves of bread. Cut into four sandwiches.

    In a small dish, stir together the balsamic vinegar and red pepper flakes. Use as a dipping sauce.

  11. OK!  Check out the website below for veggie meals and scrumptious desserts, like vegetarian cheese cake and pudding as well as tacos and aioli and chips.

    Your guests won't even know tofu is involved in the meal.
