Can I put marshmallows in my cookies?

I really love marshmallows! Would it be okay to put a cup of marshmallows in my cookie mix? Or would they expand and completely mess the cookies up? Could I use marshmallow cream? Do you know maybe a good marshmallow icing recipe?

  1. you can definitely put marshmallows in them! i would use mini marshmallows though, or just chop up regular ones. you could try making s'mores cookies - with regular chocolate chip cookies, add some crushed graham crackers & mini marshmallows & voila! :-)


  2. yes you can definitely put marshmallows in your cookies, but put the small ones, it would melt during baking but it would dry up again after cooling.only it wouldn't look the same.

    Marshmallow icing:

    INGREDIENTS

        * 2 egg whites

        * 1 1/2 cups white sugar

        * 1/3 cup cold water

        * 1 1/2 teaspoons light corn syrup

        * 1 teaspoon vanilla extract

        * 1 cup miniature marshmallows

    DIRECTIONS

       1. Put egg whites, sugar, water and syrup in top of double boiler. Beat until mixed well. Place over rapidly boiling water. Beat constantly with electric beater while it cooks for 7 minutes or until it will stand in peaks when beater is raised. Remove from heat.

       2. Stir in marshmallows and vanilla. Beat until they melt.

    Chocolate Cupcake:

    1 1/4 Cup All-Purpose Flour

    1 teaspoon Baking Powder

    3/4 teaspoon Baking Soda

    1/8 teaspoon Salt

    1/2 Cup Butter

    1 Cup Sugar

    3 Eggs

    1/2 + 1/3 Cup Water

    1/2 teaspoon Vanilla

    1/2 Cup Cocoa

    Marshmallow Icing:

    4 Egg Whites

    1/4 teaspoon Cream of Tartar

    1 1/4 Cup Sugar

    1/2 Cup Water

    Directions:

    Cupcake:

    1. Mix and sift the all-purpose flour, baking powder, baking soda, and salt. Set aside.

    2. Cream butter and sugar until smooth.

    3. Mix the flour mixture and butter mixture and add the eggs one at a tome.

    4. Add in water and vanilla and mix until smooth. Chill.

    5. Pour in muffin pan.

    6. Bake until done.

    *alternately add flour and cocoa mixture to creamed butter.

    Icing:

    1. Beat egg whites and cream of tartar until it creates soft peeks.

    2. Mix sugar and water and boil until it reaches the hard ball stage.

    3. Pour sugar mixture into the eggwhites and mix.

  3. not sure about putting the marshmallows in the cookies, but heres a recipe for marshmallow icing.

    I guess u can add marshamallow on cookie mix as long as it isn't too much.....

    or

    you could make the cookie mix then place it in your cookie sheet and stick a marshmallow in the middle........that way if it melts its most likely not to touch the cookie sheet and stick and make a mess

  5. Marshmallow Sandwich Cookies

    Ingredients

    1 (18-20 ounce) package refrigerated sugar cookie dough (or your  favorite sugar cookie recipe)

    12 marshmallows

    1/2 cup semi-sweet chocolate chips

    Directions

    1Preheat oven to temperature indicated on package/recipe.

    2,,Roll out dough on lightly floured surface (I like to use powdered sugar instead of flour) and cut cookies into desired shapes (about 1/8" thickness) and bake for 7-9 minutes. Make sure you have an even number of cookies.

    3,Cool completely on wire rack.

    4,Place half of the cookies bottom side up on a microwaveable plate  and place one marshmallow on each.

    5,Microwave for about 15 seconds or until marshmallow puffs up. You may have to do this a few at a time, depending on the size of your microwave.

    6,Top with the remaining cookies (bottom side down) to make a sandwich.

    7,Melt chocolate chips until smooth either on the stove top or in the microwave.

    8,Drizzle the melted chocolate over the top of the sandwich cookies.

    9,Allow chocolate to cool completely before serving or storing in a air  tight container.
