  1. You shouldn't get it via Fedex, it would probably end up leaking everywhere. You should either learn a recipe or see if you have any local Korean or Asian markets since traditional kimchi requires a long fermenting process and can be a bit tiring to make.

  2. there are Asian food shops around Canada. for private request, i doubt you won't be able to receive it as it is not permitted under the customs law. try to search some asian food shop on the net under Canada as i'm sure you will gonna find one. in some cases, they are on auction as i found most of the times Asian products/foods on yahoo auction. you can make it by yourself, just it takes patience and time. you can choose what kind of kimchi you would like to make.

chinese cabbage; leek; etc. actually the main thing to do is to cut the chinese cabbage in it's desired size (as you wish or piece by piece of the leaves), soak with salt in a container sqqueezing it while pouring the salt, preferably no air can enter, for a night or two nights. after soaking it with salt for a night or two, take it out and wash. then squeeze it again until the water dries out then cut it into small pieces just enough the size to be eaten and mixed it with "kimchi base". kimchi base can be purchased anywhere in a bottle. then leave it for a couple of hours, ready to eat.

(though i did not explain it well but i guess you have the hint on how to do it if you cannot find the prepared one).

  3. why not make your own kimchi?

all you need is greens, chili garlic etc...

    btw, kimchi is korean.

  4. Proper kimchi is Korean and it's not rocket science to make your own, see http://www.treelight.com/health/nutritio...
