Can I substitute all purpose flour for rice flour?

I have a recipe for cookies that calls for 2 1/4 cups all purpose flour and 1/4 cup rice flour. Can I just use 2 1/2 cups of all purpose flour? Will that ruin them?

(They're called Shortbread buttons, if that helps)

  1. Rice flour absorbs more liquid than wheat flour, so you will want to make sure you either cut down the amount of liquid in the recipe OR substitute between 1/8 - 1/4 more all-purpose on top of what it calls for.


  2. I don't see any reason why not.  Rice flour does not contain gluten so it shouldn't change the consistency too much.

  3. Your fine, just remember rice flour absorbs more liquid than all purpose so use a bit less water (only a table spoon or two)
