Question:

Can I substitute low-sugar marmalade for vegetable oil instead of applesauce?

I'm making zucchini bread and I don't want to put an entire cup of vegetable oil in the recipe AND four eggs, that's just too much. I know you can substitute vegetable oil with unsweetened applesauce, but I don't have any of that. I also know that if you use sweetened applesauce, you have to put in less sugar. So I was thinking that if I mixed a little water with the marmalade it would be about the same consistency as applesauce and have fruity ingredients, plus it's lower sugar so... does anyone know if this would work? I know it would give it an orangey taste, which I'm fine with, but would anything disastrous happen?

  1. NO you can't.

    Sorry

The problem is the sugar content in the marmalade and the lack of fibre.

    The recipe won't work.

Sometimes in baking the recipe has to be completely re-formulated by trail and error.

  2. Who knows? I'm sure nobody has done any research into this. Why don't you just see if you can find a fat-free vegan recipe if eggs and oil frighten you so much?
