I want to make an Apricot tart, however I don't want to make a filling that involes tempering the eggs. I just cant master that part yet. I found an easy recipe for the filling, but it's for a peach tart. It has sour cream in the mix, and I was just wondering if the sour cream would go well with the apricots? To me it seems like the sour cream would go better with the sweetness of the Peaches. Can I use apricots and have it still come out okay?

  1. I don't see why not. My Mom uses every fruit except apples in apple crisp. It worked out fine. Instead of sour cream, could you substitute yogurt? Just a thought.
