Can I use any pineapple upside down cake recipe in a cast iron skillet?

Or does it have to be recipe stating it is for a cast iron skillet? Thanks.

  2. Do not use copper,brass, or iron pots because the acid in the fruit will react with these metals. The iron combined with the acidity of the pineapple will turn your pineapples dark. You could line it with parchment paper. I cook just about everything else in mine. Got 3!!!

  3. I would recommend an iron skillet for it. They're great to take from stove top to oven. I wouldn't do it any other way. Cast iron is awesome.

  7. No, you can use any recipe. I've done one before & it turned out excellent. Just make sure to grease your skillet really well.

  8. You can do this for sure if you grease your skillet very well.  I would use a good amount of butter crisco and then add your brown sugar and fruit.  As long as you have a good coating of grease, you can certainly do this!!

    Gotta love cast iron still today.  :)

  9. No you can use any receipe. I just made one yesterday and it was delicious. Just be sure your butter and brown sugar are melted well when you pour the batter in.  I then served mine with whipped cream warm from the pan.

A cast iron skillet is the only way to make an amazing pineapple upside down cake, in my opinion.  Nothing caramelizes better!  Just follow whatever recipe you have and make the brown sugar and butter syrupy sauce in the skillet.  (I like to add a splash of rum to mine!)  Take it off of the heat, arrange the pineapple rings and cherry's if you desire, and pour the prepared batter in the skillet.  Put it in the oven at the temp and time that the recipe calls for.  I would make sure to check the cake batter with a toothpick so that you can take it out when it's done since the recipe may not have the cooking times just exactly right.

  11. Nope, any recipe will work just fine.  For a little extra insurance you can buy liners made for cast iron dutch ovens and cut it down to fit in the skillet.

  12. You can use any recipe. Pineapple upside down comes out richer and tasty i think in a cast iron skillet.

    *Pineapple Upside-Down Cake*

    1/2 cup unsalted butter, melted

    2/3 cup packed brown sugar

    3 cups fresh pineapple - peeled, cored and cut into 1 inch chunks

    1 1/2 cups all-purpose flour

    1 1/2 teaspoons baking powder

    1/2 teaspoon salt

    1/2 teaspoon ground cinnamon

    1/2 cup unsalted butter, softened

    2/3 cup white sugar

    2 eggs

    1 teaspoon vanilla extract

    3/4 cup milk

    DIRECTIONS

    Preheat the oven to 350 degrees F (175 degrees C).

    In a small bowl stir together the melted butter and the brown sugar; spread the mixture evenly in a well buttered 9 inch round cake pan. Pat the pineapple very dry between several sheets of paper towel, and arrange it evenly on top of the sugar mixture.

    Sift together flour, baking powder, salt, and cinnamon.

    In a large mixing bowl, cream the softened butter with the sugar until the mixture is light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla. Add the flour mixture in three parts alternately with the milk, beginning and ending with the flour mixture. Beat well after each addition. Spread the batter evenly into the prepared pan.

    Place the cake in the middle of the oven. Bake for 45 to 55 minutes, or until a tester comes out clean. Let the cake cool in the pan on a rack for 15 minutes. Run a thin knife around the edge, and invert the cake onto a plate. Serve the cake warm or at room temperature.


  13. No, a cast iron skillet should be fine for this cake.  It's a great cooking pan for just about everything because it's so thick, providing even cooking.  And that's exactly what you need.  Good luck!  Yum!

  14. OH YEA!!! My Grannie used to be famous for this cake, and she ALWAYS made hers in a iron skillet.
