Can I use cake flour to sub for all-purpose flour?

I want to make a batch of eggless cornmeal muffins, however I dont have any all-purpose flour (i need 1 1/4cup) but I do have cake flour...would it be alright to use it or no?

  1. for muffins you will be ok to use cake flour. They will be a bit lighter than using AP flour. Good Luck! use it just like the AP flour in this recipe.


  2. Yes, but add 2 Tbsp more cake flour per cup of reg. flour called for in the recipe...

  3. You might need a little more, since it's pre-sifted and lighter than regular flour... try adding about 1 TB more, and see if that's enough:)

Yes, you can use the cake flour.  If you do a straight substitution, the muffins will probably be lighter than they normally are.  This might not be a bad thing!  If you want to add an extra tablespoon or 2, that probably wouldn't hurt either.  See the link below for info about how to make your own cake flour from ap flour and cornstarch.  That's why I say you can just substitute or add a little extra.
