Can I use honey instead of sugar in a blackberry pie?

Not a blackberry phone! I am talking about baking a blackberry pie!

  1. Most honey has a very distinct flavor.  If you want to use honey instead of sugar, try it.  I would use this recipe.

    1 cup water in a pan with

    2/3 c honey

    1/4 c corn starch

    1/4 t salt

    cook over medium heat stirring contantly until thick and bubbly - cook for 2 additional minutes

    In small bowl beat 3 egg yolks - add a little of the hot mixture to the bowl of egg yolks mixing continually so your yolk does not cook!  You want a smooth mixture.  Then add the yolk mixture into the pan with the original mixture slowly - stirring constantly.  Cook and stir 2 more minutes.

    Remove from heat and add 1 Tblsp butter (not margarine).

    Let the mixture cool 10 -15 minutes and then pour it over your berries mixing until they are all coated but try not to squash them.  FOLD them together.

    Pour this into your prepared unbaked shell and bake as usual.

  2. in short yes you can.  Honey however is NOT as sweet as sugar.  I would recommend usng twice as much honey as it calls for sugar to start and then taste from there. As it is milder than sugar, it may leave your pie a lil more tart than normal. Just adjust the amount. Honey is a great choice for sweetening as it is rich in antioxidants and great for your body.  The calories earned from honey are more complex than the empty simple sugars of table sugar
