I am going to be making a vegetarian version of pepper steak and will use a fake meat product instead of the steak. However, instead of beef broth, can I substitute it with vegetable broth? Or is there any other thing I can use instead of beef broth to make it have a similar taste?

1 tbsp. paprika

2 cloves garlic, crushed

2 tbsp. butter

2 green peppers, cut in strips

1 c. green onions with tops, sliced

2 lg. fresh tomatoes, diced

1 c. beef broth

1/4 c. water

2 tbsp. cornstarch

2 tbsp. soy sauce

3 c. hot cooked rice

  1. A vegetarian mushroom broth is a good substitute.  I use it for stew.

There is a vegan Worcestershire sauce, by the way.

  2. Yes, you can use vegetable broth, but my favorite substitute for such things is vegetable "Better Than Bouillon."  It's just concentrated vegetables- no chemistry set ingredients.  It's a paste, comes in small jars, and is found on the soup aisle.

  3. "I might add a little worcheshire sauce"

Not if you want it to be strictly vegetarian!  Worcheshire sauce is made with anchovies so true vegetarians do not eat it.

I know someone who made  huge "vegetarian" meal once only to have no one eat the main dish because she had used Worcheshire!

PS  I only added this because I did not know this about the anchovies for YEARS!  I wish someone had told me sooner!

I found out by trying to feed Chex Mix to vegetarians-Big mistake-I felt just terrible!

  4. You can use veggie broth to substitute.  It should still have plenty of flavor.

  5. You can use vegetable broth.  I would add some heartier onions to the recipe (white or yellow), not just green ones.  This will help give it a richer flavor.  I'd use about 1/2 cup.  Saute the onions first.

  6. Yes,I always do.

  7. Sure you can.  I might add a little worcheshire sauce to give it a little more depth of flavor though.  Good luck!

  8. you can use water with a beef flavored bouillion

  9. Yes, you can sub veg broth - just don't expect it to have such a rich flavor as it would if you used beef.

Or you could use red wine.

  10. Yes..you can use vegetable broth..it would probably be better with vegetable cooking stock though.
