I know some plants are poisonous. I know plants have the ability to release certain chemicals into the air. But can plants really release poisonous chemicals into the air with enough abundance to harm animals?

  1. It's not that they can't, it's that they don't.  When it's in a plant's interest to repel animals, the best way not to get eaten is to be poisonous (when eaten), .nasty-tasting or smelling, or to have weapons such as thorns, stinging hairs, etc. Poison gas just doesn't enter the picture, probably because it's not as efficient as their other strategies. They don't mind if they lose a few leaves in the process, they can always grow more. Zero-tolerance is not their game.
