  1. I am not really sure if you understand what Polenta is. Polenta is a cooked cornmeal usually with herbs ,cheese and butter so if you add some cooked polenta to a recipe it will have whatever other ingredients are in it. Basically Polenta is cornmeal, but it is like the Italian style of Southern US Grits.


  2. Actually, you can buy polenta cornmeal.  It's used for making polenta, it's ground less fine than your basic cornmeal for baking.  If that is what you have, dry, uncooked yes you can use it in place of cornmeal but your dish will be a little gritty, it doesn't cook as finely as cornmeal.
