  2. Well,

I think your search for the recipe has found solace in me.

My mom prepares them for me and I bet it has a taste to die for. Presently, I am abroad and my mother is in India.

Give me your e-mail address and I'll mail it to you.

I didn't get "...but all turned out hard to bit on!!" please explain.

Here's the recipe. THIS IS HOW MY MOM MAKES IT AND I CAN DO ANYTHING TO EAT MURUKKU MADE BY HER:

Take some 'basan ka aata'. about 1 kilo. it shouldn't be too fine.

Add 3 to 5 tablespoon red chili powder. as per your liking

    2-3 teaspoon termeric powder.

take ajwain seeds(1 tablespoon less than chili powder) crush them using a grinder. take care not to make it very fine. you may even crush it between ur palms.

    1 tablespoon eating soda.

salt as per your taste. after adding all these you mix it and taste the salt. it should be perfect...

boil about 6 tablespoon of edible oil separately and add it to the above mixture. mix it thouroughly. take care abt the hot oil.(this mixture is called mohan...i donno if you know this term)

add plain water so as to knead this dough. the dough should be tight.........it should not be too loose.

sprinkle a little water and keep this mixture closed for at least 2 hrs. more than that is good.

At the time of doing it. take the dough and knead it again to make it soft (I said soft not loose). make small pieces so that they fit perfectly in the press machine

add enough oil in a wide 'kadhai' and make it very hot. once the oil is hot enough....u check that...

make the gas flame sim and put the shev until the entire piece that you added in the machin is used up. Make a rounded pattern.

now make the flame high and deep fry it. take care to flip the murukku only when the underside is perfectly fried. Fry that to about golden brown color.

once thats done remove it from the 'kadhai'...drain off the excess oil and place it on a tissue paper.

taste this and make any adjustment for salt or chili powder as required.

Enjoy once it gets cold enough.

Continue the same process. Take care to use up the entire piece of dough that u place in the press machine. If you hands are feeling a lot of heat....press murukku on a dish and then carefully transfer it to the hot oil.

They will feel crispy only when they become cold enough.
