Can anybody suggest a good type of Coopers home brew (beer) to make next?

I don't know what type of beers you like but their stout is excellent!

I suggest higher quality kits if you're going to be using them.  The hops in prehopped extract kits tend to be less than fresh.

Any one of these should do it...
