  1. it's the red pepper flakes that give 'em a kick - you can use those little packets you get from Pizza Hut. here's my fave recipe.

This is how we do greens - we just serve them up with hot sauce at the table.  You can add a pinch or two of crushed red pepper flakes to the pot with the greens as they cook, but authentic and traditional is to serve them as is, with a bottle of hot sauce at the table for everyone to spice up to their own taste.  Well, that and some cornbread, in my family.  :D

    2 - 3 medium smoked ham hocks

    5 pounds of collards

    2 teaspoon of salt

    Take 2 or 3 smoked ham hocks and put them in a large (6 quart) pot of water. Boil for about 1 1/2 hours. Add more water as it boils down. The ham hocks should begin to fall apart before you add the collard greens. Take the collard greens, separate the leaves and submerge in a sink full of cold water, "swishing" them around to make sure they're well-rinsed. Stack several leaves on top of each other, roll the leaves together, and slice into thin strips using a cutting board and large knife. Continue until you've cut the entire bunch of greens. Next, add your collard greens to the pot. This is a lot of collards, so you will need to add them until the pot is full, allow them to wilt as they cook, and then add more. Add your salt, cover and cook for thirty minutes on medium heat. Stir every few minutes to distribute the ham and flavors throughout evenly. They're done when they're as tender as you'd like them to be!

    INGREDIENTS

    6 slices bacon

    1 bunch collard greens, rinsed and trimmed

    1/3 cup apple cider vinegar

    salt to taste

    ground black pepper to taste

    ground cayenne pepper to taste

    DIRECTIONS

    Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown.

    Bring a large pot of water to a boil. Add collard greens, bacon (with grease), vinegar, salt, black pepper and cayenne pepper.

    Boil until greens are tender, about 30 minutes.

  5. first wash your greens, cut them up into small pieces,, in a large pot put them in water, with green peppers, onions, bacon about 1\2 a pound, half stick of margerine, then add about 5or 6 pieces of smoked neck bones cut in small pieces,and add some red hot peppers for the spicy taste, boil for about 1-1\2 hours, covered. cook to your desired tenderness. ENJOY!!!!!!
