Can anyone give me 'simple' tasty dinner meals, that I can make for dinner?

I have 2 children under 6 and a husband!

Anything tasty and easy to make, would be the best advice!

    here you goo:

    Garlic Chicken Melt

    1 1/2 pounds boneless, skinless chicken b*****s

    1 envelope Lipton Recipe Secrets Savory Herb With Garlic Soup Mix

    1 (14 ounce) can diced tomatoes, undrained, or 1 large tomato, chopped

    1 tablespoon olive oil

    1/2 cup shredded mozzarella or Monterey jack cheese (about 2 ounces)

    Preheat oven to 375 degrees F.

    In 13 x 9-inch roasting pan, arrange chicken. Blend soup mix with tomatoes and oil and pour over chicken. Bake uncovered for 25 minutes or until chicken is thoroughly cooked. Sprinkle with cheese and bake an additional 2 minutes or until cheese is melted.

    Cheesy Chicken

    1 cup cheese crackers

    1 1/2 teaspoons taco seasoning

    Boneless chicken pieces

    Crush crackers in plastic bag; add taco seasoning. Shake to mix. Drop chicken in bag one piece at a time; shake until coated. Place in baking dish; cover. Bake 2 pieces in microwave for 3 to 4 minutes, adjusting baking time for more pieces.

    Roasted Potatoes with Cilantro Butter

    2 pounds red potatoes

    1 ounce olive oil

    Dash of salt

    Dash of pepper

    1 ounce melted butter

    1 ounce chopped cilantro

    Preheat oven to 350 degrees F.

    Peel and slice the potatoes. Heat a skillet and add the oil. Add the potatoes and toss in the oil. After the potatoes are well coated, place in the oven to roast. Every five minutes toss the potatoes ensuring even browning. Bake until potatoes are tender.

    Remove from the oven and season with salt and pepper. Add the butter and cilantro and toss. Serve at once.

    Makes 4 servings.

    Barbecued Pork in Buns

    2 pounds boneless pork loin

    1 onion, chopped

    3/4 cup cola carbonated beverage

    3/4 cup barbecue sauce

    8 sandwich buns

    Combine all ingredients except buns in 4-quart crockpot. Cook, covered on HIGH for 5 to 6 hours or until very tender. Drain and slice or shred pork; serve on buns with additional barbecue sauce, if desired.

    Makes 8 servings.

    Baked Scallops in Garlic Butter



    1/4 cup butter

    3 cloves garlic, pressed, or 2 tablespoons minced shallot

    4 or more fresh mushrooms, sliced

    1 1/2 pounds scallops

    1/4 cup dry sherry

    Melt butter in skillet with garlic and mushrooms over low heat and simmer for 2 to 3 minutes; do not brown. In casserole or individual dishes spread a thin coat of the garlic butter. Spoon out mushrooms into dishes, top with scallops. Spoon rest of garlic butter over. Sprinkle sherry on top. Bake 10 to 15 minutes at 400 degrees F.

    NOTES: Exact amount of ingredients isn't too important. From Jewel Lake Seafood Market Cookbook (Chicago) which said to use 1/2 cup butter (!) and sprinkle paprika on top.

    Quick Pea Soup

    1 (16 ounce) can green peas

    1 cup light cream or half-and-half

    1/2 small onion

    1 carrot

    2 tablespoons butter or margarine

    1/4 teaspoon salt

    Pepper to taste

    Heat peas and cream together. Empty into blender. Add onion, carrot, butter or margarine, and salt and pepper. Blend until smooth. Pour back into saucepan and heat thoroughly.

    Makes 3 to 4 servings.

    Or just go for some good old fashioned Chef boy arde!

  5. VERY tasty, VERY easy to make;

    Fettuccini Carbonara

    5 teaspoons olive oil

    4 shallots, diced

    1 large onion, cut into thin strips

    1 pound bacon, cut into strips

    1 clove garlic, chopped

    1 (16 ounce) package fettuccini pasta

    3 egg yolks

    1/2 cup heavy cream

    3/4 cup shredded Parmesan cheese

    salt and pepper to taste

    Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.

    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.

    In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper.

    Serves 6.

  6. Here is one I use to do for my children when they were little. I would make a pocket in a  hot dog put some cheese (american) but you can use any, wrap a Pillsbury crescent roll around it and bake in the oven according to  roll directions.

    Baked beans, salad.  Sometimes mac and cheese.  the kids loved them I would make this twice a month and they really looked forward to it.  I would let them help when they got old enough and it was great fun.  

  7. EASY!

    Purchase tri-colored tortellini (fresh if possible like Buitoni),

    approx. 1-1/4 lbs of 90/10 ground beef, 1 large jar of Ragu Old World Style (meat flavored?) Tomato Sauce, broccoli florets (not baby florets or broccoli cuts), grated fresh parmesan-reggiano cheese (good quality), and fresh Italian flat-leaf parsley and fresh basil chopped (herb quantities according to your taste buds).

    In a sauce pot, saute the ground beef until no longer pink, then add the Ragu Sauce, broccoli florets (2 cups approx.), parmesan cheese (a generous amount), and chopped leafs of parsley and basil.  At this point decide if you want to add a 1/2 to 3/4 cup of water.  Do you like your sauce thinner or thicker?  Bring to a boil on med-high heat, then reduce to a simmer and cook until the broccoli is tender (approx. 10 minutes).  Meanwhile, prepare your tortellini according to the package directions.  Serve in large bowls with additional grated parmesan cheese over top.  Accompany with warm bread or toasted garlic bread.  Have you ever tried Semolina Bread?  It is a very delicious Italian bread.

    TIP:  To get all the tomato sauce out of a jar, add a little water and replace the lid and shake the jar then pour!

  8. you have to try jessica seinfeld's cookbook, Deceptively Delicious.  all of the recipes incorporate vegetables sneakily.  my very, very, picky family has loved everything i've tried.  all of the recipes are easy to make.  chicken nuggets, for example, use cut pieces of chicken breast in a brocolli egg wash, dredged in a mixture of flour and ground flaxseed meal.  my son and husband had no idea that there was brocolli in it!

  9. i love pizza subs.. and the kids lvoe to help make them.. and boyfriend loves them also.. you need sub buns, pizza sauce, pepporoni and mozzerella cheese... if you like other things you can also add those like peppers or mushrooms or onions... and you first put the buns in the oven, opened and bake for like 5 mins because you dont want the bread to get all soggy from the pizza sauce! you can also butter them with some garlic butter for a more pizza taste before baking them.. then take them out and put the pizza sauce on, and your pepporoni, then the other stuff you want and cheese on top and bake in the oven on 325 until the cheese is melted... there fast, and yummy.!

  10. we Just had this the other night for dinner. It was so simple and easy and everyone liked it.

    Wild West Baked Chili Mac

    1 pkg. (24 oz.) VELVEETA Shells & Cheese Dinner 2 cans  (14.3 oz. each) chili with beans 1 cup each: chopped green and red bell peppers (1 large each) 1 pkg.  (8.5 oz.) cornbread mix PREHEAT oven to 375°F. Prepare Dinner as directed on package. Stir in chili and peppers. Spread into 13x9-inch baking dish.

    PREPARE cornbread batter as directed on package; spoon evenly over chili mixture to within 1/2 inch of edges.

    BAKE 25 to 30 min. or until top of cornbread is golden brown and wooden pick inserted in center comes out clean.

    My fave:

    Chicken or beef

    Vegies (anything in season but carrot, cauliflower, broccoli, capsicum ("pepper" - yellow, red or green), onion, sweet / snap / s~ peas, beans.

    Sauce - half soy sauce and half honey  (children prefer more honey 3/4 to 1/4 whereas adults tend to lean the other way so you may need to trial this)

    Sesame seeds or nuts such as cashews to taste

    Cook meat and sauce, add vegies and sesame seeds / nuts.

    Serve with rice.

    Mince can also be a good easy meal you can do different things with and refridgerate over one or  two nights.

    Cook mince, add in sauces to flavour.  Sauces can include but is not limited to tomato sauce or paste, salsa, bbq, soy, worcestorshire or whatever else you have and taste good together...  Or you could do the soy and honey above.

    Add vegies including potato, sweet potato and pumpkin. You can serve with or on pasta or rice too.


  12. well, one of my husband's favorite meals is this:

    i package ground meat (approx 1 - 1 1/2 lbs), sauteed, with chopped onion, until brown, then drained of all grease.  add to that one can of manwich sloppy joe sauce, and one jar of salsa (i use black bean and corn), you can serve this on rolls, on rice, or my hubbie's favorite - with tortilla chips as the utensils!  he enjoys using the scoops tortilla chips with this, and they taste great!  i hate cheese, any and all of it, but, you could add some cheese to this, if you'd like, as well.

  14. I've been a Chef for about 8 yrs. If you'd like a site for simple and basic recipes I'd try ( sparkspeople.com ). I've seen many sites that offer a wide variety of recipes and for the most part there all good. The reason I prefer this site is for the simplicity of it. It's free to join and there's many feature's that come with it. All the recipe's have rating's by people who have perpared, cooked and eaten the selected dish.
