  1. My chili recipe:

    Break out the largest pot you have (8 quart recommended).

    Get Pinto Beans, Kidney Beans, White Beans and a 5 Bean Mix. Soak the beans 24 hours prior to cooking the chili itself. Use about 6 ounces (or 200 grams) of each type.

    Brown 2 pounds of spicy pork sausage and 2 pounds of ground beef (or ground turkey). Drain.

    Stew 1 pound of tomatoes (optional).

    Chop 1/4 pound of Jalapenos, 2 Red Bell Peppers, 1 Orange and 1 Yellow Bell Pepper. A 1/4 pound of Yellow Banana Peppers and a 1/4 pound of habeneros--keeping all the seeds. (If you double those amounts, cut it in half, add cilantro and one pound of tomatoes to the half, you have an excellent dip for tortilla chips).

    Drain the beans.

    Mix the meat and peppers in a large skillet, stir for about 5 minutes over medium heat. Dump them into the beans, add 32 ounces of Tomato Sauce, 16 ounces of Tomato Paste.  Add in optional stewed tomatoes.

    Heat on medium low for 3 hours, stir occasionally.

    Serves about 20 people. Great for leftovers, the longer it sits on the stove on a medium low setting, the better.

  4. Brown or Wild Rice whatever style you prefer

    chopped green onion

    diced chicken breast

    scrambled eggs

    frozen peas & carrots mix

    diced Thai chilis

    Cook the rice (use chicken broth instead of water)

    brown the chicken, add onions, peas and carrots. cook until veggies are almost done. Add eggs scramble gently. Add cooked rice and Thai chilis.   This is an Americanized version of a standard Thai meal called KhaoPot.  I didn't put quantities because it depends on my mood at the time I'm making it.
