    Vegan Cheese Sauce

    from Felix Weber - Bavaria, Germany

    1 medium potato, peeled and cubed

    1 small carrot, thickly sliced

    1 small onion, quartered

    1 clove garlic (I use 2)

    1 cup water

    1 tsp. salt

    4 oz. tofu

    1/2 cup brewer's yeast

    Cook potato, carrot, garlic, and onion in the 1 cup of water till vegetables are very soft.

    Pour into blender, along with tofu, salt and brewers yeast, and puree.

    Add more water if necessary.

    The ending consistency should be very thick, like a cheese sauce.

    If you like a bit of a "kick" to the sauce, like what using sharp cheddar would give, add some hot sauce.

    You'll be tempted to use more than 1 cup of water, but don't until the final pureeing stage, since you don't want to end up making this too thin.

    You can always add more water/broth/white wine at the end; however, this is not a sauce you can "cook down".

    A good way to use this as a main dish is to add 1 package frozen broccoli (thawed, and squeezed dry of all moisture) and a jar of sliced mushrooms.

    Serve over cooked rice.

    Here's an easy and completely vegan recipe to help you deal with your cheese cravings.

    Yield about 1½ c

    Time 10 minutes

    Ingredients ½ c nutritional yeast

    3 T flour

    4 t corn starch or arrowroot powder

    ½ t salt

    1 c water

    1 T olive oil

    2 t Dijon mustard



    Directions Combine yeast, flour, corn starch, and salt. Whisking constantly over medium heat, add water and oil. When the sauce thickens, add mustard. Continue heating for 30 seconds and then serve over pasta, veggies, or whatever else needs a good dose of warm and gooey cheese.


  2. I picked sweety cause everyone else didn't read.  you said vegetarian, therefore, no actual cheese can be involved.  Sweety seems to have followed your directions.  i was going to ask how you make cheese sauce veggie, but sweety seemed to answer that before i could say it.

    Quick and Easy Alfredo Sauce

    INGREDIENTS

    1/2 cup butter

    1 (8 ounce) package cream cheese

    2 teaspoons garlic powder

    2 cups milk

    6 ounces grated Parmesan cheese

    1/8 teaspoon ground black pepper

    DIRECTIONS

    Melt butter in a medium, non-stick saucepan over medium heat. Add cream cheese and garlic powder, stirring with wire whisk until smooth. Add milk, a little at a time, whisking to smooth out lumps. Stir in Parmesan and pepper. Remove from heat when sauce reaches desired consistency. Sauce will thicken rapidly, thin with milk if cooked too long. Toss with hot pasta to serve.

    quick:  place cream in a saucepan bring to the boil, then add grated cheese mixing until incorporated season.

    100g butter

    100g flour (plain)

    1 litre Milk

    100g approx cheese(chedder, grated)

    Half an onion stidded with a bay leaf and cloves

    1.  Melt the butter then add the flour and beat until smooth. Cook out for a minute then leave to cool.(this is a roux)

    2.  Bring the milk to the boil in a separate pan with the studded onion in.

    3.  Gradually add the milk to roux mixing untill the roux absorbs the milk this can be done in about 4 stages.

    4.  Once all the milk is added strain, and return to a clean pan.

    5.  Add grated cheese to taste and a tsp of mustard, heat until fully incorporated. Season well. ENJOY!!
