  1. My husband makes a killer one.



    1 can spicy refried beans (like Rosarita)

    1/3 pound cubed Velveeta

    1 can Ortega fire roasted chiles

    1 bottle Taco Bell hot sauce

    Cilantro



    Nuke the beans, Velveeta, chiles, and half the bottle of hot sauce, stirring occasionally until all hot and melted.  Float the remainder of the hot sauce on top, and sprinkle with a lot of fresh chopped cilantro.  The first time he invented this, the two of us gobbled down the whole bowl!


  2. EASY BEAN DIP

    One 30 ounce can refried beans or fat free refried beans

    1 package taco seasoning

    1/2 teaspoon drops tabasco sauce or more to taste

    1 cup chopped sweet onion

    2 ripe avocados cut into small cubes

    1 teaspoon lemon juice

    1 cup sour cream or light sour cream

    1 1/2 cups cheddar cheese ~ grated

    1 can large black olives ~ sliced

    1 large tomato  

    Combine refried beans, taco seasoning, tabasco sauce and onion, mix well. Spread bean mixture evenly into a 9 x 13 dish. Remove avocado meat from the outer shell, cut into small cubes. In a small bowl add lemon juice and avocado cubes, gently stir so the lemon juice covers the cubes. Drain off excess lemon juice and layer avocados over the beans. Spread sour cream over the avocados, then layer with cheese, olives and tomatoes. Refrigerate for 3 hours before serving. This dip can be made the day before. Serves 6 to 10.

  3. One can chipotle peppers

    1/4 cup red hot

    Buzz this in a blender to make a paste this will keep for about two months in the fridge or longer in the freezer.

    After scraping the paste from the blender add in two cans of black beans into it and buzz again.   Add in 1 tsp granulated garlic and enough paste to give it some heat.  Be careful because the chipotle stuff is HOT.  Chill and serve.

    Wood smoke's Bean Dip

    2 cans re-fried beans - get the fattening kind (I made my own from pinto beans)

    1 large bulb of garlic - (1/2 cup chopped garlic)

    1/4 cup jalapeno juice

    4 oz mozzarella cheese

    4 oz sharp cheddar

    4 oz Monterrey jack

    4 oz red hot sauce (to your taste i use a local mexican food joint's hot sauce - garlicky & hot)

    --In a crock pot on low, put a little oil to hinder sticking. Get the first 3 ingredients mixed and temp hot. Slowly mix in cheeses and hot sauce until they disappear.

    --Serve a small aspirin to each person for the certain heart attack from the fats. j/k

    This is so good, it seems sinful!

  5. GOOD DIP

    1 lb. hamburger, optional

    1 bell pepper, chopped

    1 onion, chopped

    1 can Rotel

    1 can stewed sliced tomatoes

    1 pkg. taco seasoning

    1 c. rice

    1 can kidney beans

    1 lb. Velveeta

    In a large skillet, brown hamburger, onion and bell pepper. Add Rotel, tomatoes, and taco seasoning. Bring to a boil. Place hamburger mix in a crockpot, add kidney beans and rice and stir. Then add Velveeta that is cut into 1 inch squares. Set on low and cook for 1 1/2 hours or until rice is done.
