Can anyone help me spice up my bland meat loaf?

Need some new recipes for meat loaf, I know you can just do so much with a meat loaf but maybe someone out there has some different ideas?

  1. You can make your meat loaf the same way you normally would, but shred some pepper jack cheese in it.  


  2. Use your standard meat recipe.  But instead of forming it into a loaf spread it thin (1/2-1") on a sheet of wax paper. About 12x8" spread the top of the meat with green peppers tomatoes mushrooms and your favorite steak sauce (adjust veggies to what your family likes) roll up like a jelly roll spread steak sauce on top like you usually use ketchup and bake as usual until meat in center is 160 degrees.

    I like to serve this with a garlic mashed potato or stuffed potato skins and a green vegetable.  We call it steak loaf :)

  3. Mix in a little bit of Italian sausage with the hamburger is one way. My wife mixes in powdered onion soup mix and it is awesome as well.

    Budweiser Barbeque sauce TM  on top the last 15 minutes of cook time is unbelieveable.

  5. You must have catsup for the top, very important!! Don't over mix and adding pork or veal to beef will help to...

    Man-Catching Meat Loaf

    1 tablespoon butter

    1 yellow onion, minced

    1 green bell pepper, diced

    6 crimini mushrooms, chopped

    1 tablespoon minced garlic

    1 (12 ounce) can diced tomatoes

    1/2 teaspoon dried oregano

    1 teaspoon dried basil

    1/2 teaspoon ground mustard

    1/2 teaspoon curry powder

    1/2 teaspoon crushed red pepper flakes

    1/2 pound ground beef

    1/2 pound ground veal

    1/4 pound bulk hot Italian sausage

    1 egg

    3 tablespoons Worcestershire sauce

    1/4 cup ketchup

    3 tablespoons prepared spicy mustard

    3 tablespoons teriyaki sauce

    1 cup Italian-style bread crumbs

    4 slices thick sliced bacon  

    1/3 cup ketchup

    1/4 cup Worcestershire sauce

    1 tablespoon yellow mustard

    DIRECTIONS

    Preheat oven to 350 degrees F (175 degrees C).

    Melt the butter in a skillet over medium heat. Cook and stir the onion, bell pepper, and mushrooms in the butter for 2 to 3 minutes; stir in the garlic, diced tomatoes, oregano, basil, ground mustard, curry powder, and red pepper; continue to cook until the onions are translucent and the mushrooms are golden brown, about 5 minutes; set aside.

    Combine the beef, veal, sausage, egg, 3 tablespoon Worcestershire sauce, 1/4 cup ketchup, mustard, and teriyaki in a bowl; mix gently with your hands. Fold in the mushroom mixture and breadcrumbs. Shape the resulting mixture into a loaf and move to a baking dish. Lay the bacon slices on top of the loaf.

    Bake in preheated oven for 45 minutes.

    While the meat loaf bakes, prepare the glaze by whisking together the 1/3 cup ketchup, 1/4 cup Worcestershire sauce, and yellow mustard in a bowl. Pour the glaze over the loaf and return to oven for another 10 minutes. Allow meat loaf to rest for 5 minutes before serving.

  6. One pack of lipton onion soup mix, two table spoons of brown sugar and pour on can of tomatoe sauce over the top and bake.

    McCormick has a great meatloaf mix.

  7. I never could eat meatloaf until my hubbys grandma gave me her recipe. i made it for him but decided to have a taste and now i love this recipe.

    1 1/2 lb chop meat

    1 egg beaten with 1 tbs milk

    2 tbs ketchup

    2 tbs mustard

    1 small onion diced

    3 cloves garlic diced

    1/2 cup breadcrumbs - may need more so add more when mixing if needed

    1 tsp each salt pepper italian seasoning or just dried basil and parsley

    1 small block mozerella

    first mix meat with beateb eggs,and milk, add seasonings, onion, garlic, ketchup mustard and then shape mix into a rectangle shape.

    add thick slices of mozerella to the middles of the rectangle the carefully mold sides up to incase cheese in meat.

    make sure loaf is tight then place on gressed baking dish with cut up carrots and potatoes and onions - drizzle vegg with oil and bake at 350 for about 45-60 minutes.

    when you cut it the cheese oozez out and it is so juicy!

  9. Meatloaf is one of my favorite recipes - serve with mashed potatoes and whole green beans or steamed baby carrots.

    Meatloaf

    3 pounds ground beef

    3 large eggs

    1/2 to 3/4 cup Italian style bread crumbs

    1 packet Lipton's Onion or Beefy Onion Soup Mix

    1 can sliced mushrooms, drained - Optional

    1/2 cup sliced black olives- Optional

    2 tablespoons BBQ sauce

    1 tablespoon A-1 sauce

    1/2 cup salsa or Picante sauce

    1/2 cup shredded cheese - I use a combination of Cheddar, Italian Blend and Pepper-Jack cheeses or whatever I have on hand

    Mix all ingredients, form into a loaf in a loaf pan, bake at 350 degrees F for 1 1/2 hours.

Meatloaf is an amazingly versatile comfort food.  I'm a chef by trade and have played around with meatloaf a lot.  You need a good basic mix -- I use pork, veal and beef.  A few eggs, breadcrumbs, salt and pepper, minced onions, garlic, green pepper.  I also add a ladle or two of marinara sauce.  After that, try "stuffing" it with a nice smoked cheddar (just form your loaf around a 3"x3" log of cheese).  If you own a smoker, smoke the whole meatloaf.

You can add sausage to the meat or soup mic into it like onion soup mix or mushrooms.  There are so many things you can do to meatloaf.  Little Tapatio in the mix or a bit of spicy V8 would work too.  All depends on the flavor your going for.  Add Garlic, onion, some put in corn.  Hope this helps.

  13. i use B.B.Q. sauce instead of ketchup. it makes it sooooo much better.

  14. I am not sure exactly how you make yours, but just adding a  package of Lipton's onion soup mix to your mixture will help a lot! I stay away from ketchup because it I think it is what gives meatloaf a bad wrap. Just put ketchup on the table and the person can add it if they choose to do so. Allrecipes.com has great recipes-they are rated too with comments too.

  15. I don't follow a recipe, per se, but try adding some Worcestershire sauce or even horseradish. I also, sometimes, use ground sausage as well as ground beef.

    You can always do a western style, using BBQ sauce instead for the ketchup and put some brown sugar on top about the last 10 minutes of baking

    Or make it Italian, use Italian seasonings instead of your regular onion and garlic powder, use pizza sauce instead of ketchup and put mozzarella cheese on it.   When I make it this way, I flatten my meat mixture into a rectangle, spread the sauce on that and add the cheese on top of that and roll it up.
