Can anyone reccomend a bicycle computer that would work on a rim like this.?

I  think you are  asking for trouble, mounting a bicycle computer on a motorcycle like that.  Bicycle computers simply aren't meant to be mounted on a wheel like that, much less a machine like  that.  You'd better look into a motorcycle speedometer for that application.
