The Flower Drum is quite near and off Little Bourke Street in Chinatown.  The food is pretty good and the service is excellent.

The Spaghetti Tree on Bourke Street is a block or so away.  It has great, traditional italian food and they cater to alot of the theatre goers - so they will make sure you have your meal in plenty of time if you are going to see a show.  They are medium priced.

There are lots of good Greek restaurants on Lonsdale Street which is a few blocks down from Collin Street. My favourite is Stalactites at the corner of Lonsdale and Russell Street.
