  1. That really depends on what island. Every island has completely different foods, culture & languages. So a word that would describe Jamaican food probably wont describe cuban food. What kind of restaraunt are you talking about?   If you are doing a restaraunt with food from lots of islands than you will need a word to describe the whole caribbean. Here are a few ideas I have but they might only work for 1 or a few islands.

    West Indies

    Caribe

    sazon

    Montego bay (jamaica)

la isla del encanto (puerto rico)

    Bahama Mama

    Tropical Breeze

    Sol y mar

    Lime Cay (jamacia)

    Cayo Coco (cuba)

    cuba libre

    Calypso (trinidad & tobago)

    Salsa

    Mangu (dominican republic)

    Mango's

    Papaya's

    Taino's

  2. Most hip restaurants throughout the world tend to use a term, a historical name, or a number as a restaurant name. For example, in NYC there is a Dominican resturant that is called "809", which is the country's area code. Other resturants such as such use a term that is traditional to the nation that the country's cuisine is from, like "Iberia" (for Spanish food), "Tao" (for Chinese), and "Havana's" (Cuban):

Here are some suggestion for hip and attractive names for a general Caribbean reastaurant:

Bahamaian food:  Lucaya's, San Salvador, Junkanoo

    Cuban:  Havana's, Marti

Puerto Rican:   Old San Juan,  787,  Mar y Sol

Dominican:   Quisqueya, Duarte (after the Dominican liberator), 809

Trinadian:  Lere (after the original indigenous name of the island), Calypso,  TNT (or T&T), 868

    Jamaican:  Patois,  Xamaica, 876

Never use anything with political connections as this is a turn off for many diners who have strong political feelings.
