  1. Creamy Eggless Mayonnaise

    1 tablespoon sugar

    1/2 teaspoon paprika

    1/2 teaspoon salt

    Few grains of white pepper

    1/2 teaspoon of dry mustard

    1/2 cup of evaporated milk (undiluted)

    2 1/2 tablespoons vinegar

    1 1/4 to 1 1/2 cups oil

    Mixed dry ingredients with milk, beat in vinegar, add oil gradually, beating thoroughly. Use less oil for thinner mixture or thin with evaporated milk before serving.

    Makes 1 pint

    3 tablespoons lemon juice

    1/2 cup soymilk

    1/4 teaspoon salt

    1/4 teaspoon paprika

    1/4 teaspoon prepared mustard

    6 tablespoons vegetable oil

    Directions

    1Put all the ingredients except the oil in a blender.

    2Blend on lowest speed.

    3Add the oil slowly until the mixture starts to thicken.

    4Continue blending until thickened and smooth.

    5Transfer to a jar and store in the refrigerator.

I make one similar to the other 2 but I use silken tofu as my binder, in a food processor just add all the ingredients but the oil and buzz it until smooth, then drizzle the oil in like egg style mayo, I use dry mustard, cider vinegar (unfiltered), honey and a light oil like canola or soyabean.

    For a kick, a dash of hot sauce or cayenne pepper can be used. I like to add my lemon juice after it is done to more lighten it or thin it down. fresh is best 1 is enough.
