Question:

Can anyone tell me some good vegetarian meals they have had?

I need some new ideas for food, because i've been eating the same things over and over. hehe.

  1. One of the best vegetarian cooks is Jean Brady. Love her nutritious meals.


  2. INDIAN FARE............delicious kinds of eggplant dishes with rich spicy sauces and beans with rice and all kinds of neat stuff.

  3. Try visiting vegetarian restaurants in your area, and trying new dishes. I absolutely adore Buddhist Chinese cuisine, and Indian food is very good.  Then see if you can make what you had at home.


  4. I made some falafal burgers which were lovely (I thought!):

    250g/9oz chickpeas, soaked overnight (or a can)

    1 medium onion, very finely chopped

    2 cloves garlic, crushed or finely chopped

    2 tsp ground cumin

    2 tsp ground coriander seed

    6 tbsp chopped parsley

    ½ tsp chilli powder

    2 rounded tbsp plain flour

    1 tsp salt

    Oil for frying

    (process it all in a food processor and add the flour last - you might need more flour than it says) - makes 4 patties.

    I also love dahl and would recommend you trying to make that (I'm sure there are some great recipes on the internet, but I use one in an old Indian cookbook I've got - it's takka dahl)

    Also hummus is very tasty and can pep up salads and some other dishes or just be used for snacking with some tasty crackers, tortillas, pitta bread etc.

My favorite lately that I had yesterday is a whole wheat pita sandwich stuffed with a salad of dark leafy greens, wheat berries, chickpeas, diced onions, tomatoes, and cucumbers, parsley, with a dressing of tahini and red chili sauce. Add a sprinkle of salt too. This can change for the seasons too. Last fall I had it with roasted delicata squash slices and arugula (rocket), but what's important is chickpeas, wheatberries, parsley, tahini, chili sauce. This sandwich is so good I think about it for hours after.

    But you can put a lot of things in a pita such as a lettuce salad with some shredded carrots, cabbage, diced toms/cucumbers, slices of onions and sprinkles of sunflower seeds tossed with dressing of your choice, or stuff in falafel with lettuce, toms, cukes, and onions with tahini.

    It's summer so go crazy with fresh fruits and veggies. One of my favorites is diced watermelon and onions tossed with mint and lime juice. Or an open face tomato sandwich on toasted bread generously sprinkled with chopped fresh or dried basil and salt (you could also put these under the broiler for a couple minutes for something different).

    Spring/Salad rolls are splendid too.

    Or roll up a tortilla after spreading it with hummus adding red bell pepper and cucumber strips, onion, and a sprinkle of crumbled walnuts topped with baby spinach and a splash of flax oil; or some grilled veggies such as zucchini, onion, peppers, etc., topped with roasted red pepper sauce; or shredded cabbage and carrots with red onions and bean sprouts and a peanut sauce for a Thai inspired wrap.

  10. I had some good vegetarian yesterday!  medium rare, with some A1 & shrimp scampi on the side

  11. really simple, but one of my favorites - cheese tortellini & veggies mixed together, with italian dressing. I usually mix the frozen tortellini and frozen veggies, douse it with dressing and let in thaw in the fridge...but you can use fresh veggies too
