I'm curious every time I get to see this in people's letter. what does it even mean anyway?

Actually it's from Latin: post scriptum ("after the written").

Post = After

Script = Writing

It's a short thought or sentence that you add after writing a letter from back in the days when everything (including mail) was handwritten and you couldn't just insert new text in your word doc.

It's added at the very end after the "Regards" or "Yours sincerely" etc.
