Can anyone tell me what sweetbread is?

I was noticing that a chef was using sweetbread as an element to a dish. What is sweetbread and why do they use that term to describe this animal product?

  1. They are the thymus glands of lamb, beef, or pork. There are two different connected glands; one in the neck and the other near the heart.   Both are edible, but the heart thymus gland is more desired because of its delicate flavor and texture.  It is also more expensive. Usually, sweetbreads are soaked in salt water, then poached in milk after which an outer membrane is removed. Once dry and chilled, they're often breaded and fried until crisp.  Their also used as a stuffing or in pâtés.

    Fried Sweetbreads

    2 pairs sweetbreads

    2 tablespoons flour

    1 cup milk

    Salt and pepper

    Egg

    Bread or cracker crumbs

    Prepare as directed and cut in even-sized slices.

    Sprinkle with salt and pepper, dip in beaten egg and crumbs and fry in deep fat.

    When well browned on both sides, place them on a platter.

    Make a sauce with two tablespoons of the fat in which the sweetbreads were fried, the flour and milk and season with salt and pepper.

    Fried sweetbreads are often served with green peas, placed in a mound or a little hill on the center of the platter.

    Macaroni may be boiled very tender and laid on the platter and the sweetbreads placed in the center, the pipes of the macaroni being laid about them in the form of a nest.

  5. They are from the neck NOT the brains and very good when breaded and fried. They have a different texture and may be hard for some people to get used to but they are very very very yummy.
