Can dough b refrigerated after ingredients have been mixed if I just want 1 loaf rather than 5? (pansobao)?

  1. Your best bet is to freeze the dough since even refrigerated dough will have yeast activity.

    To prepare the shaped dough for freezing:

       1. Mix and knead dough and let it rise for the first time. If using Instant Active Dry Yeast, omit first rise and go through the resting period of 10 minutes. NOTE:  Make sure dough does not overrise.

       2. Deflate dough (omit if using Instant Active Dry Yeast) and shape for baking. Do not let the dough rise for the second time.

       3. Immediately freeze shaped dough.


  2. I have refrigerated dough before but just for a day then used it. You might think about freezing it, if you are not going to use it right away.
