Can eggplant be frozen?

My husband bought three huge eggplants and I found a recipe for 1 and would like to save the other two.

try half freezing an apple then biting into it.

o eggplants are like a sponge,, if u freeze them all they will do is absorb water,, thats why they are hard to fry without alot of oil,, sponge
